Wheatgrass is the young grass sprouted from wheat seeds. The vivid green blades of grass are long, thin and delicate. Wheatgrass is naturally sweet with an earthy grass like flavor that is amplified significantly when juiced. Wheatgrass should be harvested when between seven and eleven inches in length as this is when the grass is at its nutritional peak.

Wheatgrass, scientifically known as Triticum aestivum is a member of the Poaceae or true grasses family. It is available fresh growing in trays of soil and processed in tablet, powder and liquid form.
A potent source of nutrients, wheatgrass contains a wide range of vitamins and minerals including vitamins A, B, C and E as well as amino acids and enzymes. Wheatgrass also contains upwards of 70% of the natural plant pigment chlorophyll which studies have shown may help prevent certain cancers.
Wheatgrass is most commonly served juiced as this makes it easier to digest and improves absorption of the grasses vitamins and minerals. It can be enjoyed on its own as a shot, oftentimes paired with a wedge of citrus. It can also be combined with other fruit and vegetable juices such as carrot and/or apple juice for better palatability and flavor. Note: Never drink more than two ounces of wheatgrass juice at one time.
Wheatgrass dates back over 5000 years to Egyptian and Mesopotamian cultures which valued the grass for its numerous health benefits. It was not until the 1930’s that wheatgrass became known in the western world when chemist Charles F. Schnabel conducted experiments to promote the health benefits of wheatgrass for animals and humans. In the 1940’s holistic health practitioner Ann Wigmore further popularized wheatgrass juicing through her experience using the juice as a healing tonic on herself and others. She also created the first wheat grass juicer by modifying a cast iron meat grinder.
