Santol are round fruits that have the outward features of a peach; yellow to golden in color with a red blush and slight fuzz. The fruit may have a thin peel or a thick edible pulp inside the rind with a thin, milky juice. Depending on the variety, the segmented central pulp that surrounds inedible brown seeds will range from sweet to sour. The flavor of ripe, sweet Santols have mild peach and apple notes combined with the pulpy texture of apples.
The Santol fruit is available during the summer and fall.
