White Jalapeno pod has a conical shape and comes to a broad point at its tip end. It has a milder flavor than that of the green variety with sweet, vegetal nuances and a crisp and juicy mouth feel. Its spice as well is milder than traditional Jalapenos, giving off just enough heat to add spice to a dish but not overwhelm it. Its flavor, when roasted, will take on an enhanced sweetness and its texture become more tender and meaty.

Botanically known as a cultivator of Capsicum annuum, the White Jalapeno is a member of the Solanaceae or nightshade family. Jalapenos are one of the most popular hot peppers in the world however of all the varieties the White Jalapeno is the most unique and is a specialty item only occasionally available. It is similar in shape and flavor to the bogyiszloi chile pepper of Hungry and to the Santa Fe grande of North America.
White Jalapenos can be used interchangeably in recipes calling for green Jalapenos. A classic stuffing pepper they can be filled with cheeses or ground meats and roasted or fried. Add fresh or roasted White Jalapeno to breads, pasta dough, soufflés, salsas, guacamole, cream based sauces and omelets. Their pale coloring makes them ideal for use in subtlety adding heat and a spicy pepper flavor to dishes without adding color. Their flesh is sturdy enough to stand up to roasting, deep frying and pickling. They can be dried and ground into a powder to make a white pepper seasoning. To store, keep refrigerated and use within one to two weeks.
Originating in Mexico, many varieties of the Jalapeno pepper have been in Mexican markets since the sixteenth century. Its name, Jalapeno comes from the city of Jalapa in the state of Veracruz, Mexico. The Mexican states of Chihuahua, Veracruz and Oaxaca are major producers and cultivate approximately 40,000 acres of Jalapenos a year. In Mexico the White Jalapeno is often marketed as Jalapeno Guero, Guero being a generic term for blonde or yellow in Spanish.
