Ice or by its original name Ghiaccio peaches have a rounded, classic peach shape. Their outer skin is light golden yellow with cream-colored tones when ripe. The skin of the Ice peach is smooth and typically free of hair. The inner flesh is somewhat lighter than the outer skin and is very firm, crisp, and slightly juicy. Known for their high sugar content, the Ice peach offers an aromatic scent and exceptionally sweet flavor.

Ice peaches are a relatively new Italian peach variety botanically known as part of Prunus persica. There are currently 3 different types of Ice peaches known by their Italian name as Ghiaccio-1, Ghiaccio-2, and Ghiaccio-3, with each type having slightly different ripening times. Ice peaches are known for their remarkably sweet flavor as well as for their ability to stay ripe on the tree for extended periods of time lasting up to 25 days without suffering a decline in flavor or texture quality.
Ice peaches offer vitamins A and C as well as dietary fiber.
Ice peaches can be used in most preparations that call for traditional peaches. Slice and add to salads or serve atop ice cream and yogurt. Cook down and puree to make preserves, sauces, and syrups. Add pureed Ice peaches to cocktails and frozen desserts or served atop pancakes and waffles. Slice and use as an accompaniment on cheese boards or serve alongside grilled meats or shellfish. The flavor of Ice peaches pairs well with vanilla bean, cinnamon, pork, white fish, tomato, mint, basil, cream, feta cheese, pine nuts, fruity olive oil, and ginger. An excellent keeper Ice peaches will keep refrigerated for 2 or 3 weeks.
During a visit to America Dr. Luigi Conte and Antonio Nicotra were inspired by famous plant geneticist Floyd Zaiger to create a “new and different” peach variety to meet market demand in Italy. The fruits of their labor, the Ice (Ghiaccio) peach would go on to be named after the Italian word for “ice”, a nod no doubt to its icy white coloring.
Ice peaches are a new variety developed by plant breeders Dr. Luigi Conte and his colleague Antonino Nicotra at the Centrum for Fruit Cultivation (CRA) in Rome, Italy. The intention of their breeding program was to create new varieties of peaches and nectarines that would enhance the characteristics people loved about existing stone fruit and eliminate or lessen the negative characteristics. Between 1988 and 1993 using peaches from China, Korea, Japan, and Italy they created three variations of an all-white peach that would come to be known as Ghiaccio. Ghiaccio (Ice) peaches have excellent resistance to disease which makes them ideal for growing organically. Ghiaccio (Ice) peach trees are also a highly productive variety and produce remarkably durable fruits.
