Micro Bull's Blood has bright red stems topped with two elongated ovate leaves. Their upper surface is a dusty green tinged in red while the underside is a light burgundy with deep magenta veining. Micro Bull’s Blood is tender and sweet with a distinct beet-like flavor. Its earthy taste and aroma, similar to that of spinach, is due to an organic compound called geosmin.

Micro Bull's Blood is the immature sprout of the red beet variety of the same name. Botanically classified as Beta vulgaris, they are member of the Amaranthaceae family, and often used interchangeably with the microgreens of their close cousin, red amaranth. In 2013, the University of Maryland conducted a study on the nutrition, sensory, quality and safety evaluation on 25 different microgreens. The study showed that some of the microgreens had a significantly higher amount of nutrients than their mature counterparts. Micro Bull’s Blood was the most favored microgreen for consumer acceptability according to the study which may be the reason it is the most popular beet variety grown for microgreens.
Micro Bull’s Blood contains vitamins A and C, and antioxidants that have anti-inflammatory and natural detoxification properties. The red pigment found in beets and also the leafy Micro Bull's Blood beet, called Lycopene, is believed to reduce the risk of several types of cancer.
Micro Bull's Bloods' is usually suited for savory dishes, but can complement some sweet flavors as well. It is intended for raw preparations, specifically as a garnish, to add a punch of red color. Like the beet root, these greens mimic the same flavors and may be used with similar ingredients, such as, cheese, bacon, prosciutto, shallots, eggs, dill, paprika, smoked fish, walnuts, garlic, chives, citrus, hazelnut, pistachio oil, and vinegar. Float on top of borscht for an extra bite of beet flavor or combine with salad greens in a beet and goat cheese salad. The delicate leaves will wilt if exposed to prolonged heat and they do not stand up to heavy dressings and sauces. Refrigerate in a sealed container and use immediately for the best result in quality.
Micro Bull's Blood and microgreens, in general, have been a trendy green seen in upscale restaurants since the 1990s. Originating in southern California, these microgreens can be found around the world because of how easy they are to grow in greenhouses. They have gained popularity since the study done by the University of Maryland showing them to possibly be the newest superfood.
Micro Bull’s Blood was one of the first microgreen varieties ever grown, desired for its stunningly vibrant color even when young. It began showing up on chefs’ menus in San Francisco in the 1980s as a garnish. Today Bull's Blood has proven its versatility and is used in more and more applications and often times harvested as a slightly larger salad green. They are ideally grown in high light conditions with low humidity and good air circulation. They are grown mostly in greenhouses because of their size but under the right conditions they can also be grown indoors and outdoors. The short harvest time of 1-2 weeks after germination makes them ideal for farmers and also home growers.
