Chi gu is an aquatic plant with a small to medium sized, white edible bulb. With a mild flavor, similar to a potato, Chi gu has a very starchy and somewhat crunchy texture when cooked. The bulb is typically sliced very thin and then fried as a substitute for potato chips. Chi gu should be peeled of its light tan outer skin before cooking.
Chi gu bulbs is available for a brief moment in mid-winter.
Chi gu is also known as Chinese Arrowhead and cigu, it is botanically classified as Sagittaria sagittifolia. Most often the bulbs are imported from China and this tuber is eaten particularly on or around the Chinese New Year, the same brief timeframe the bulb is available.
