Baby White carrots are tapered and thin, roughly cylindrical with nearly coreless roots. Their color, ivory white with shades of earth is directly correlated with their sweet, mild carrot flavor with nuances of earth. Baby White carrots have a crisp texture which lacks any overt succulence, regardless of the root's high water content.

Each plant in this family has the umbrella-like flower clusters that characterize this family of plants. Baby White carrots are actually "fast maturing" varieties that are grown specifically for their immature roots or varieties that are not allowed to mature, rather picked young and tender. The reason for White carrots being white is due to the plant pigment and flavanoid known as quercetin.
The White carrot lacks the pigment found in other carrot varieties giving it a lower nutritional value, however, it does contain health-promoting phytochemicals: natural bioactive compounds that work with nutrients and dietary fibre to protect against disease.

All fruit expels ethylene gas that is readily absorbed by carrots. Carrots exposed to ethylene turn very bitter making them not suitable for eating.
White carrot's origins can be found in the area known as the Fertile Crescent, a region in the Middle East that spans from present day Afghanistan to Pakistan and Iran. It was first domesticate in the Mediterranean region circa the 8th Century. The first illustration of a White carrot, labeled No 23 Karettes Daucus Carota, was featured in an Italian Herbal catalog in 1500.
