Green apricots are unripe apricots that have been harvested before maturity. Their shape is rounded yet oblong with a velvety skin growing to about 2 to 3 centimeters in length. The fruit contains a loosely connected central pit. Since Green apricots impart a bitter flavor they are best used for jams, chutneys or pickling rather than fresh eating.
Green apricots are available in the late spring through summer.
