Yellow chives are milder and sweeter in flavor and fragrance than their standard counterparts. They are also more tender and temperamental. After being exposed to light they may begin to turn green with translucent ends, which is a sign of an aging yellow chive.

Yellow chives have several other names, including golden chives, Gau wong and albino chives. Albino refers to its growing conditions. Much like white asparagus, yellow chives' growing environment is completely devoid of light, removing the natural chlorophyl factor from the equation.
Yellow chives are most often used in Japanese and Chinese cuisine. Though they are more mild in flavor that standard chives, yellow chives may also be used as a substitute for standard chives. Use minced yellow chives to finish meat, poultry or seafood dishes. Pair with other fresh herbs, cheeses, mushrooms, noodles and chiles. The color and slight onion flavor or chives may be used to lighten as well as enhance the flavors in a dish. Refrigerate to store, making sure chives are kept dry until ready to use.
Chives are native to both the New World and the Old World, specifically North America, Europe and Asia. They are the only Allium with Old and New world origins. When grown in hotter climates or warm weather seasons, chives become more pungent and garlicky.
