The white onion is a long-day storage variety of onions that is grown for its bulbous root. Each plant produces a singular root that is harvested once its vertical above ground leaf tops begin to wither and fall over. When onions are cut, the cell walls release a sulfur compound called propanethial-S-oxide that floats into the air. The chemical, identified in 1985 by researchers at the University of St. Louis in Missouri, turns into sulfuric acid when it comes into contact with water, which makes up 90% of onions' flesh.
European, Asian, and Native American medicines are filled with onion treatments. Onion poultices are used in modern alternative medicinal treatments to reduce high fevers, relieve colds and congestion and to draw poisons from wounds and ulcers.
White onions are a versatile onion that can be used both raw or cooked in a variety of mediums whether sautéeing, slow roasting or grilling. They are quintessentially used for adding to soups and stocks.
