Water Caltrops, also known as a bat nut or devil pod, are the seed pod of an aquatic plant. These dark brown nuts are hard, have smooth downward facing horns, and other ridged areas. The overall shape of the nut is described as a bull’s face and horns or the silhouette of a flying bat. Water Caltrops contain a white fibrous nut that has a very mild, starchy flavor, and needs to be cooked before consumption; typically boiled, roasted, or dried and ground into a flour.
Water Caltrops are available in the late summer through the fall.
