Sweet limes are generally round and smooth, and depending on the climate where they are grown, their skin may remain green when ripe or mature to a golden-yellow color. The highly aromatic rind is thin and easy to peel. The flesh has low acidity and is barely tart, offering a sweet flavor with mild honey notes.

Sweet limes are botanically classified as Citrus limettiodes, and are commonly known as Lima dulce, Persian Sweet lime, Indian Sweet lime, and Palestine Sweet lime. This species should not be confused with Citrus limetta, the sweet lemon, which is also sometimes called sweet lime. Common varieties of Sweet lime include Indian, Columbian, and Soh Synteng. Sweet limes are thought to be a hybrid of a key lime and a sweet lemon or citron.
Sweet limes contain several antioxidants, including Vitamin C. They are a good source of dietary fiber, and their rind is also high in vitamin B.
Sweet limes can be used in fresh and cooked applications. They can be juiced for use in dressings, marinades and beverages, or preserved as pickles, chutneys and marmalades. Their flavor pairs well with meats, poultry and seafood, and they can also be used in desserts or as garnishes. Choose fruits with a heavy feel, which indicates more juice. Store Sweet limes unwrapped for around two weeks at room temperature, or refrigerate for up to a month.

Sweet limes are a natural hybrid believed to have originated in India, and they did not arrive in the United States until 1904. Today, they are still grown in central and northern India, as well as throughout the Mediterranean and parts of the Americas.
