Suyo Long cucumbers are cylindrical and spindly with the ability to grow up to 45 centimeters in length. The outer skin is dark green and thin with a ridged and knobbed texture. When young, these cucumbers may bear thin spikes that can easily be removed by rubbing the skin. Suyo Long cucumbers may grow in long, snake-like coils if they are not trellised. The inner flesh has many edible, soft seeds and is creamy-white with a sweet and mild flavor with little to no bitterness and a crisp texture.
Suyo Long cucumbers are available from late spring to late fall.
Suyo Long cucumbers, botanically classified as Cucumis sativus. 'Suyo Long,' are a Chinese heirloom variety and a member of the Cucurbitaceae family along with melons and squashes. Suyo Long cucumbers are burpless, meaning they are sweeter, have thinner skins, and are longer and narrower than the common cucumber. Suyo Long cucumbers can be harvested at any time and retain their flavor. They are vigorous growers, and each plant can produce an abundance of cucumbers.
Suyo Long cucumbers contain vitamin A, B, and C, as well as some essential minerals like calcium, magnesium, potassium, phosphorus, and zinc.
Suyo Long cucumbers are best suited for raw applications, and the skin is so thin that it does not need to be removed. They are popularly enjoyed in Sichuan-style salads, where they are cut and tossed with sesame oil, Sichuan peppercorns or hot pepper flakes, garlic and sugar, and served cold. In addition, Suyo Long cucumbers are used in sesame cucumber salads and served fresh with orange flower water. Suyo Long cucumbers are also good for pickling with garlic. Suyo Long cucumbers pair well with flavors of citrus, vinegar, herbs, nuts, seeds, and creamy, salty cheeses. Suyo Long cucumbers will keep up to a week when stored in a perforated bag in the refrigerator.
The cucumber was often used in traditional Chinese medicine and was believed to have healing and soothing properties. Cucumbers became a common ingredient in home remedies around the time of the Song Dynasty in 960 CE and were used to aid in clearing the body of toxins, to help cool the body down from fever and heatstroke, and to reduce inflammation.
Suyo Long cucumbers originated in northern China around 100 BCE, although the exact date is relatively unknown. Today Suyo Long cucumbers can be found in specialty markets in Japan, the United States, and Europe.
