St. George mushrooms have thick, white, and smooth umbrella-shaped caps that earned its ‘Calocybe’ designation which translates to “pretty head.” The firm cap may become tan or ‘sun-blushes’ with age and exposure to the sun. Beneath the cap are stark white gills and a white, club-footed stem. The aroma of the St. George mushroom is different than that of typical mushrooms and smells of wet flour. The texture can be somewhat powdery, and the flavor strong. Typically only young specimens are collected.
St. George mushrooms are available mid-spring into the summer.
St. George are wild mushrooms, originally classified as Agaricus georgii by Carl Linnaeus in 1753, and after being reclassified three times, they are now officially known as Calocybe gambosa. Their original botanical name reflected the time of year in which the mushroom fruited, just around the British holiday of St. George’s Day in mid-April.
St. George’s mushrooms contain vitamin D and some other essential nutrients. One researcher found that the mushroom contains hypoglycemic properties that should be further studied. Another study found that St. George’s mushroom contains some cancer-inhibiting properties as well as anti-bacterial properties.
St. George mushrooms can be used in any recipe that calls for other cultivated mushrooms. The mushrooms can be eaten raw, but the preferred method may be cooked. Wash and chop the meaty St. George mushroom caps and add to pasta dishes, omelets or sauté with asparagus and serve as a side dish. Add diced mushrooms to soups and braised meats. Keep St. George mushrooms up to a week in the refrigerator.
The timing of its appearance reflects its name in Italy, where the mushrooms appear in March and are called Marzolino. In Germany, St George mushroom appears in May and is known as Maipilz.
St. George mushrooms are found throughout the cooler climates of Europe and North America, often in grassy areas and pastures. St. George mushrooms can typically be found in the same places year after year, and can sometimes be found in fairy rings.
