The flesh is crisp, waxy and as its name suggests, creamy in both texture and flavor. It is not uncommon for creamer potatoes to have indentations in their flesh, as there age reflects their tenderness.

Most Red creamer potatoes are the Early Rose cultivar, which became the most widely grown potato in America in the 19th century, cultivated for its vigorous growing abilities, high yields, excellent quality and resistance to late potato blight. The Early Rose potato is the pedigree of the Garnet Chili potato which is a parent plant to over 150 different potato varieties, including the Russet.
The predominant form of nutrition that the red potato provides is carbohydrates. Regardless of speculation, the flesh and the skin contain equal amounts of nutrition.
