This process begins with a Vidalia variety, which is saved from the previous season and replanted in the late summer. The dirt is mounded around the bulb and the plant in turn produces long green onion stems, known as the calcot onion. The Red calcot onion is longer than other green onion varieties and delivers a distinguishable juicy consistency with a sweet flavor.
