The pea plant is a climbing vine that can reach heights of 2 meters when mature. They have round hollow stems with thin coiled tendrils and soft green leaves with pale yellow veins and a subtly lobed round shape. The pods have a distinctively purple exterior with green flecks, but the peas themselves are the classic lime green color. The overall texture is snappy and crunchy with a rich water content. Purple Sugar Snap peas have a fresh grassy aroma and a sweet vegetal flavor with nutty qualities.
Purple Sugar Snap peas are available year-round with peak season during the cooler temperatures of spring and fall.
Botanically known as Pisum sativum, sugar snap peas are an herbaceous annual in the Fabaceae family. Unlike shelling peas which have fibrous and inedible pods, sugar snaps are entirely edible from their blossoms, tendrils, leaves and pods. They were developed by breeding a Chinese snow pea with a mutant pea plant. The result is a snappy sweet pea with thicker walls and plump pods. This purple variety is the work of Calvin Lamborn who has been selectively breeding peas for 35 years in Twin Falls, Idaho. Some of his other works include the 52 shelling snow peas, which can measure 17 degrees on the Brix scale, purple snow peas, maroon sugar snap peas and red-yellow mottled snow peas.
