Pixie cabbage, botanically known as Brassica oleracea, is a member of the Brassicaceae family. An early season cabbage variety the Pixie cabbage is known for its small size and sweet flavor.
Pixie cabbage is a petite version of conventional green cabbage and measures between four and six inches in diameter when mature. Pixie cabbages consist of densely compacted layers of leaves that form into a round and sometimes slightly pointed head. Pixie cabbage offers a crisp bite and delicate, sweet cabbage flavor. Like most cabbages, the Pixie variety will be at its sweetest flavor when enjoyed uncooked.
Pixie cabbage offers calcium, vitamin C, iron, vitamin K, folate, manganese, and dietary fiber. When served raw, pickled, or fermented with vinegar and spices Pixie cabbage helps support healthy digestion.
Pixie cabbage can be used in many applications that call for conventional cabbage. Their small size makes them an ideal cabbage to use up in one meal. Chop and add to green or potato salads or use to make traditional summer coleslaw. Layer into sandwiches or use to add sweetness and crunch atop tacos. Chopped or diced Pixie cabbage can be sautéed, stir-fried, and steamed. Pixie cabbage can also be used to make kimchee, sauerkraut, and other fermented vegetable preparations. To store, keep Pixie cabbage wrapped in plastic in the crisper drawer of the refrigerator. When stored properly it should keep for two to three weeks. Once the cabbage is cut it should be used within a few days.

Pixie cabbages are believed to be a variety of cabbage originally from England. Pixie cabbage dates back to at least the 1800’s and mention of it appears in the American Agriculturalist under New and Rare Seeds for 1867. Pixie cabbage can be grown around the world pending they are provided full sun and nutrient-rich, well-drained soils. A small yet hearty variety the Pixie cabbage is somewhat tolerant of both heat and frost. Pixie cabbages are fast growing, maturing between 45 and 60 days.
