Petite™ Red Frill Mustard resembles the fully grown version of the vegetable, only in a smaller format. The ornately toothed leaves are a shade of deep green with purple and maroon accents. They average 10 centimeters in length and have tender wispy stems that are less fibrous than those of mature frill mustard. Petite™ Red Frill Mustard is herbaceous and nutty with the classic peppery bite of mustard greens. Though delicate in comparison to the fully grown plants, the petite version is considerably more hearty and versatile than when harvested as a microgreen.

Mustard greens are a member of the Brassica family along with arugula, radishes and turnips. They are botanically classified as Brassica juncea and commonly known as Ruby Streaks or Scarlet Frill. The name mustard is a derivation of the Latin word meaning, "burning must." Petite™ Red Frill Mustard is grown primarily for fresh eating and usually harvested 2 weeks after the microgreen stage.

Petite™ Red Frill Mustard offers a robust flavor and substantial texture. The peppery bite is best suited for savory dishes, and pairs well with rich meats, smoky flavors and Asian cuisine. Use to add a flavorful burst in salads and make a stunning garnish atop sushi and sashimi or miso soup. Red Frill mustard is a Japanese heirloom variety and compared to common mustard greens, has limited commercial exposure. Petite™ Red Frill Mustard is primarily found in specialty grocery stores and farmers’ markets.
