Micro Red Amaranth ranges between 1 and 5 centimeters tall and is typically harvested within 2-4 weeks of sowing. The small sprouts have fuchsia stems and diamond-shaped burgundy leaves. They have a mild earthy flavor that is reminiscent of a beet with a delicate sweet grassy finish.
Micro Red Amaranth is available year-round.
Micro Red Amaranth are members of the Amaranthaceae family. As a close relative of the beet family, Micro Red Amaranth is commonly confused with beet microgreens, which are usually marketed under the name Bull’s Blood. Often regarded as a common weed, mature Amaranth plants are commercially cultivated for their edible seeds, leafy greens and decorative blooms. Micro Red Amaranth are usually from the variety known as “Midnight”, “Garnet” or “Love Lies Bleeding”.In 2013, the University of Maryland conducted a study on 25 commercially available microgreens and found that they may have 4 to 6 times more nutrients than their full-grown counterparts. This study has caused a lot of people to believe that they may be the newest superfood but studies are still being conducted to validate the findings.
Micro Red Amaranth is rich in vitamin C, carotenoids, vitamin K, and vitamin E.
Micro Red Amaranth has an earthy mild flavor that is usually suited for savory dishes, but can complement some sweet flavors as well. It is intended for raw preparations, specifically as a garnish, to add a punch of red color. The delicate leaves will wilt if exposed to prolonged heat and they do not stand up to heavy dressings and sauces. Micro Red Amaranth is best left undressed and added only at the very final stage of finishing a dish. Refrigerate in a sealed container and use immediately for the best result in quality.
Top chefs have used microgreens to enhance the flavors of their dishes and give a new dimension to their plate presentation since the 1990s. Micro Red Amaranth continues to be a popular microgreen with chefs solely because of its bright color.
Amaranth is native to the Americas, specifically Peru where it was probably domesticated somewhere between 6,000 and 8,000 years ago. The mature plants are more readily eaten as a vegetable, as opposed to being cultivated as a grain, in Southeast Asia, Africa and India. Micro Red Amaranth is generally grown in green houses as it requires consistency in temperature and performs well under controlled warm growing conditions.
