Maguey plants range in varieties, some large, others small, however all of the varieties produce long, sturdy leaves, bordered with sharp spines. The leaves are a dusty, dark green to gray-green in color. The leaves are best used as wrappers to steam and cook savory foods, imparting a subtle aromatic quality to the dish.

The Maguey plant is botanically known as Agave americana and is also commonly known as American agave or the Century Plant. The Maguey plant has provided indigenous residents of Mexico’s highlands with building material, clothing, and culinary applications for centuries. The most common culinary application of this is found in the harvested heart of the plant, when the juice is extracted and then distilled into tequila and mescal. The fibers of the plant may be wound together to make twine, and the ground cooked pulp of the leaves has also been used in many cultural medicinal practices throughout the centuries.
