Oca Sunrise Potatoes
Sunrise oca can be used in a fashion similar to that of potatoes and other root vegetables, however unlike potatoes they can also be consumed raw.
Roselle may be used raw, dried or juiced. The fruit's tart flavor requires a sweetener of some kind, and it is successfully used like a cranberry in recipes for jam, jelly, chutney and even wine.

Hidden Rose Apples® offers a tart and subtlety sweet flavor with a taste that has been likened to that of strawberry lemonade. Its skin is muted yellow to tan green in color, oftentimes capped with a faint red blush and covered in white lenticels (spots). Its interior flesh is crisp and juicy with a vibrant pink to red color.
The Hidden Rose® apple is available late fall through early winter.
Marketing and production of the Hidden Rose® apple is regulated by Dragonberry Produce of Clackamas, Oregon. A trademarked variety, Dragonberry Produce holds the rights to the Hidden Rose® apple, meaning all orchards that produce the Hidden Rose® do so by permission and under strict quality control guidelines.
Cholesterol-free, apples contain pectin, a beneficial fiber. This fiber has been shown to lower the body's cholesterol level and lessen the risk of heart attacks. Pectin also slows glucose metabolism in diabetics. Apples contain potassium, which may reduce the chances of a stroke and have a trace of boron believed to build bones and increase mental vitality.
Delicious when enjoyed out of hand, this apple's remarkable color is best showcased when thinly sliced and served raw. Use in lieu of bread or crackers for both sweet and savory spreads, serve paired with robust cheeses on a charcuterie board or use as edible garnish. Its sweet tart flavor and vibrant color holds up well when cooked. Layer with slices of white fleshed apple for a striking tart, quiche, crisp or pie. Cook down to make pink applesauce and preserves or sauté and serve atop pork, chicken or roasted squash.
The Hidden Rose® apple was first discovered in the early 1960’s growing in a meadow on property owned by Lucky and Audrey Newell in Airlie, Oregon. The Newell family enjoyed the apples produced by the tree on their property until they moved in the mid 1960’s. The apple was not marketed to the public until the 1980’s when Louis Kimzey, a former field manager at Thomas Paine Farms rediscovered it when touring the Newell’s old property. The apple first came to be known as the Newell-Kimzey variety and later as Hidden Rose®. It has been found to thrive best in the climate of the Pacific Northwest and is grown almost exclusively in Oregon.
