Green Okami spinach produces rich, green, spear-shaped leaves with tender, edible stems. This spinach variety is delicate and offers a mild spinach flavor. Green Okami spinach is similar to Baby Spoon spinach in taste and texture.
Green Okami spinach is available early winter through spring.
An excellent source of antioxidants, spinach has four times the beta carotene of broccoli. High in lutein, nutrients in spinach help lower blood cholesterol. It also contains carbohydrates, protein, fiber, vitamin A, vitamin C, calcium, iron and folic acid. For best nutritional value, eat raw or slightly cooked.
Use Green Okami spinach as a salad ingredient or wilt with hot pastas and grains. Pair with fresh citrus and berries, nuts, strong cheeses, spring vegetables such as peas and asparagus, or toss with hot past or grains until barely wilted. Baby Green Okami spinach has a more mild, less metallic flavor than mature spinach and is complimented by vinaigrettes, fresh herbs, garlic, toasted bread and beans. Keep Green Okami spinach cool and dry until ready to use.
