Fried Chicken mushrooms grow in dense clusters. The dome-shaped caps can grow from one to 5 inches in diameter and range in color from light beige to darker brown and sometimes gray. The caps begin to turn upward at the margin and become convex with age; its tightly-packed white gills run beneath the cap. The aroma is pleasant and its flavor is somewhat sweet. Fried Chicken mushrooms have a soft, chewy texture.
Fried Chicken mushrooms are available in both the spring and fall months.
Fried Chicken mushrooms are botanically classified as Lylophyllum decastes. Multiple species fall under the L. decastes umbrella, though based on recent DNA research on mushrooms, they all may be the same species. The somewhat strangely named mushroom is also known as Clustered Domecap mushroom.
Fried Chicken mushrooms have anti-inflammatory properties. Studies done in the 1960s reported that Fried Chicken mushrooms contain tumor-inhibiting properties. More recent studies show that the mushrooms may have a radioprotective effect on the body’s immune cells.
Fried Chicken mushrooms can be sautéed and prepared much like the more common mushrooms. Both the caps and the stems can be used. They are however, best in soups, stews and sauces. Fried Chicken mushrooms have an okra-like thickening effect, which works well in these applications.
In Japan, the Fried Chicken mushroom is called “hatake-shimeji.” It is used in a popular dish called takikomi gohan, which is seasoned rice with meat and vegetables, using ingredients reflective of the season.
A cousin of the Japanese Hon-shimeji, the Fried Chicken mushroom grows amidst grassy or overgrown areas, fruiting in the disturbed soil. They can be found growing in plentiful quantities throughout Europe and the United States, with variations in color on the different continents. Fried Chicken mushrooms are cultivated in Japan to great success.
