Hawaiian Heart of Palm are available year-round.
Hawaiian Heart of Palm also known as palm heart, chonta, palmito, palm cabbage, swamp cabbage, or burglar's thigh is harvested from the variety of palm trees known as Bactris gasipae, a clumping palm. Hawaiian Heart of Palms is grown at Puna Gardens, a small family farm on the Big Island of Hawaii.
Hawaiian Heart of Palm is encased in a tough cylindrical, ivory husk. Inside is a velvety, tender flesh, giving its name heart of palm. The appearance is similar to that of white asparagus, and the flavor and texture is very much like an artichoke. About four inches in length, individual hearts may be as thin as a pencil or measure nearly one to one-and-one-half inches in diameter. Hawaiian Heart of Palm can be consumed raw or cooked.
