Roselle may be used raw, dried or juiced. The fruit's tart flavor requires a sweetener of some kind, and it is successfully used like a cranberry in recipes for jam, jelly, chutney and even wine.
Barrel Cactus Fruit
The fruit of the Barrel cactus is best prepared in sweet applications, since its natural tartness lends itself well to a hint of sugar. Cook the fruit down with agave syrup to make a jam, jelly or a sweet and sour chutney.

Firestix™ have long woody stems topped with vibrantly colored feathery plumes. The flowers can range in color from purple, magenta, red, gold and green. They have a neutral flavor that is mildly reminiscent of corn silk. Firestix™ are entirely edible but best used as a decorative garnish, due to their somewhat woody texture. Their sturdy stems make them ideal for sticking upright in cocktails as a swizzle stick. The blossoms are also quite hardy and will retain their vibrant color and texture when exposed to heat or steam. Firestix™ are an appropriate garnish for both sweet and savory dishes.
Firestix™ are available year-round.
Firestix™ is a trademarked name for a variety of the amaranthus flower sometimes called love-lies-bleeding and molten flower. The Amaranthaceae family has almost seventy species that are cultivated as leafy vegetables, cereal grains and ornamental plants. The showy blossoms are entirely edible, and marketed as an edible garnish.
Amaranth dates back to the 14th century when the plant was used by the Incans and Aztecs as a primary food source as well as for ornamental and ritualistic purposes. As a result of the Spanish conquest in 1521 amaranth cultivation significantly declined and was replaced by other grains such as corn as a food staple. Currently amaranth has experienced resurgence in popularity due to the high protein content it provides.
