The Eureka lemon variety has classic, bright yellow skin with yellow flesh, thick, white pith, and contains few seeds. The fruit has a medium-thick, firm rind and skin, with very tart juice and a fragrant, oily peel. The pronounced, blossom-end knob is characteristic of the Eureka.
Eureka lemons have a peak season in late winter through early spring, and are usually available year-round.
The Eureka lemon, botanically known as Citrus limon, is used as the standard commercial lemon variety because of its consistent flavor, firm texture, high oil content and nearly year-round growing season. Originally named "Garney's Eureka" after Thomas Garney, who propagated the Eureka lemon tree. The Eureka lemon is one of only two lemons classified as "true lemons".
As the common lemon variety, Eureka lemons may be used in any recipe, from beverages to marmalade, in pies and vinaigrettes. They may be substituted for almost any other lemon variety because of their tart acidity, balance, and high oil content. Zest and juice for cocktails, preserve wedges in salt or use to flavor salts, syrups and marinades. Pair with oils, other citrus, poultry and seafood, baked goods, tea, or fresh fruits and vegetables. Keep refrigerated until ready to use, up to one month.
The Eureka lemon was developed in Los Angeles, California in 1858 and commercialized in 1877.
