Sunrise oca can be used in a fashion similar to that of potatoes and other root vegetables, however unlike potatoes they can also be consumed raw.
Roselle may be used raw, dried or juiced. The fruit's tart flavor requires a sweetener of some kind, and it is successfully used like a cranberry in recipes for jam, jelly, chutney and even wine.

Cranberry shelling bean pods develop a distinct red and yellow speckled exterior when mature. Inside the plump pods are approximately 5-6 oval ivory colored beans that are also dappled in the characteristic cranberry markings. Raw Cranberry shelling beans are are typically lean, grassy and starchy while cooked beans develop a sweet, rich and meaty flavor reminiscent of chestnuts with a plush creamy texture. Their vibrant color does fade when cooked.

Cranberry shelling beans are a variety of Phaseolus vulgaris and also known as frijol Cargamanto Rojo in Spanish speaking countries or bean pearl in Malaysia. They are a multipurpose bean as they can be harvested fresh in pod or left to dry on the vine and utilized as a dried bean, and then technically classified as a legume. Cranberry shelling beans are also commonly mistaken for Borlotti shelling beans, an Italian bean whose characteristics are nearly identical.
