The flesh of the Pimento is sweet, succulent and more aromatic than the red bell pepper. The Pimento pepper is one of the mildest in the Scoville index falling in the lowest range of the scale (100-500) units.

Pimento chile peppers, also referred to as Cherry pepper and Pimiento, are botanically a part of Capsicum annuum. A sweet variety of pepper, the Pimento is known to have one of the lowest Scoville ratings of any chile pepper. In commercial production they are most commonly known for their use as a stuffing for green olives. They are also utilized for making pimento cheese and the processed meat product, pimento loaf. While they can sometimes be found in pickled form in specialty markets they have yet to take off as a fresh market pepper and fresh distribution is limited to select farmers markets when in season.
Pimentos are rich in vitamins A and C, and contain capsaicin, which can help relieve arthritis and chronic pain.

Pimento peppers are commonly found stuffed in olives, included in Pimento cheese blends, and dried, ground and sold as the spice paprika. Pimento peppers can be roasted or grilled and added to many savory dishes including paella, stews, tapas, omelets, dips, sauces and spreads. Fresh peppers can be diced or sliced to bring flavor, color and texture to salads and fresh salsas.
The name "Pimento" comes from the Portuguese word for bell pepper.
The Pimento is native to South America, but also appears in Spain, Hungary, Morocco, and the Middle East. It was introduced to Spain with Columbus's return from the New World and has become a staple of Spanish cuisine.
