Baby fennel is immature fennel that produces licorice-flavored feathery leaves. The roots are also edible. Baby fennel seeds are sweet and release an anise aroma.

Fennel is of the species Foeniculum vulgare whereas anise is of the species Pimpinella anisum. The flavor of fennel and anise are very similar, and for this reason, there is often a confusing exchange of their Asian names. To add even more confusion, fennel is sometimes confused with dill. At maturity, fennel is a taller plant with longer, somewhat shinier and less divided leaves. Fennel stems are not hollow, as are those of the dill plant. If ever in doubt, simply taste the leaves; fennel's delicate flavor of licorice distinguishes the two.
A fair source of vitamin A, vitamin C, niacin and potassium, fennel contains small amounts of calcium, iron, protein and carbohydrates, plus provides some dietary fiber. Low in fat and calories, one cup of fennel has about 30 calories.
Baby fennel make an attractive garnish for most anything. For a light salad using contrasting flavors, combine baby fennel, smoked ham and fresh oranges sections. To store, place in plastic bag; keep in coldest part of refrigerator. Use within three to four days for optimum taste and quality. If allowed to dry, the flavor of baby fennel is lost.
Thriving most anywhere, fennel plants can grow to be very old. Not minding ordinary soil, fennel prefers plenty of sun and can tolerate dry and sunny conditions. Loving the living conditions, fennel has naturalized along the coast of Northern California.
